Celery is a biennial, bright green plant. Its root and leaves are used as a spice in many cuisines of the world.
European kitchen came aware of it relatively late, but, nowadays, knows all of its value as spice and as medicinal herb.
Celery is also very healthy because of its low calorie value and is an indispensable ingredient of almost all diets.
It is used in different forms – fresh, cooked, dried or frozen.
In European cuisine both root and leaf are used, while oriental cuisine uses almost exclusively stem and leaf.
Dried celery root is used in meat industry and production of ready-made meals and sauces, spices and spice mixtures.
