Calcium chloride
E509
Calcium chloride is used in food industry for consolidation and as an electrolyte. It has a distinctly salty taste.
We can find it in sports drinks and bottled water and can also be used as a preservative to maintain firmness of canned vegetables.
At higher concentrations, it gives salty taste to pickled cucumbers not increasing the sodium content. In the dairy industry, it brings back natural balance between calcium and protein in production of cheeses.
It is used in brewing industry to correct deficiencies of minerals in the water and can also affect the function of yeast during fermentation.
