Ammonium bicarbonate (ammonium hydrogen carbonate) is a white, crystalline powder.
It has mild odor of ammonia and it is water-soluble. At 36°C to 60°C, it decomposes into ammonia, carbon dioxide and water vapor, thus causing decrease of water temperature.
It is used in food, especially confectionery industry in order to achieve looseness and crispness of the final product.
It is interesting that, before the appearance of modern baking powders, ammonium bicarbonate was used in households for this purpose.
