Isomalt is a white, crystalline, odorless substance. It is a disaccharide consisting of two sugars (glucose and mannitol).
It serves as a substitute for sugar, primarily used for its physical properties similar to sugar. Its 2 kcal/g is half the value of sugar and has only a small effect on sugar level in blood, and, at the same time, does not contribute to tooth decay.
However, like most sugar alcohols, it carries the risk of stomach problems when consumed in large quantities.
Maximum consumption amount of about 50 g per day for adults and 25 g for children is advised.
It is usually blended with other artificial sweeteners of higher intensity (e.g. acesulfame) to achieve the sweetness of sugar.
