Metatartaric acid is a creamy-white powder or granules of characteristic odour and with high esterification index.
It is tartaric acid anhydride (a merger of two molecules of d-tartaric acid under the influence of heat with loss of one water molecule) that is added to wine to prevent formation and deposition of tartaric acid salt crystals.
It increases the secretion of wine-stone at lower temperatures and establishes the chemical and physical stability for a long time (9 months to 1 year).
This makes it particularly suitable for wines that will not be stored for longer period.
