Glutamate (monosodium)
E621
Monosodium glutamate, also known as sodium glutamate and MSG, is the sodium salt of natural non-essential amino acid of glutamic acid.
In its pure form, it appears as a white crystalline powder.
It is a supplement to the food, used as a flavor intensifier. Modern, commercial MSG is produced by fermentation of starch, sugar beets, sugar cane or molasses.
While it was associated with food in Chinese restaurants in the old days, MSG is, nowadays, used in most fast food chains and in production of various products such as spice mixes, ready-made soups, ready-made frozen or dried products, “snack” products, etc.
