Vanillin is an organic compound that is in nature present in vanilla and was also found in roasted coffee and Chinese red pine.
Synthetic vanillin is, instead of natural vanilla extract, used in food and pharmaceutical industry.
Both methyl and ethyl vanillin are used, of which ethyl vanillin is more expensive due to fact that it is stronger and thus more effective. It has application in the fragrance industry, production of detergents and pharmaceutical industry.
It is mostly used as a spice in sweet foods. Production of ice cream and chocolate makes three quarters of its total consumption and it is also used in production of confectionery and bakery products.
