Potassium sorbate is a potassium salt of sorbic acid, very soluble in water.
It is primarily used as a preservative in production of food and beverages. It acts as an inhibitor of formation of yeast and mold in many products such as sauerkraut, soft drinks, margarine, mayonnaise, bakery products, etc.
Important effect of potassium sorbate is increase of product durability. Acceptable daily intake is 12,5 mg/kg or 875 mg for adults of average weight.
